Con el objetivo de determinar la diversidad de alimentos producidos en huertos familiares y cómo estos influyen en la seguridad alimentaria y nutricional de las familias de Trifinio (áreas fronterizas entre Guatemala, Honduras y El Salvador) y Nicacentral (área centro norte de Nicaragua comprendida por los municipios de Waslala, El Cuá, Jinotega, Tuma/La Dalia, Matiguás, Muy Muy, Rancho Grande, San Ramón) en un contexto de variabilidad climática, se levantó información a través de encuestas que se aplicaron durante un estudio de línea base en el año 2013 y monitoreo en el año 2015 del Programa Agroambiental Mesoamericano (MAP) del Centro Agronómico Tropical de Investigación y enseñanza (CATIE). Las encuestas fueron realizadas a 329 familias que cuentan con patios, y forman parte de MAP. Con la información recolectada en los estudios de línea base y monitoreo de MAP se elaboraron bases de datos de los diferentes temas contenidos en la encuesta, que a su vez sirvieron para realizar los posteriores análisis estadísticos. El cambio climático, los bajos ingresos económicos, la falta de educación, la mala utilización de los recursos y otros factores más, provocan severas bajas en la producción de alimentos, lo que ocasiona condiciones de inseguridad alimentaria y nutricional en Centroamérica. La amenaza de sequía permanente hace necesario implementar actividades de adaptación como siembra de árboles en la comunidad, viveros, huertos familiares, siembra de cultivos resistentes a las sequías como tubérculos, y el manejo del ganado de tal forma que pueda convivir con los árboles y el bosque. Los territorios de Trifinio y Nicacentral, en el 2014-2015, presentaron marcadas condiciones de sequía y de alta susceptibilidad a desastres naturales. Por tratarse de zonas eminentemente rurales, la economía de las áreas presenta una fuerte dependencia de la producción, principalmente de granos básicos cultivados en el patio familiar. Con el fin de analizar el aporte de los huertos familiares en la diversidad de la alimentación de las familias, se estimó el índice de Shannon. También se determinó la riqueza de alimentos dentro de cada grupo de estos. En este caso la variable respuesta es un conteo, por lo que se usó un modelo lineal generalizado para evaluar la hipótesis de igualdad de medias. Para cumplir con los objetivos propuestos para la presente investigación, se consideró al puntaje de consumo de alimentos FCS como el puntaje adecuado para realizar los análisis estadísticos que mostraran la comparación entre línea base y monitoreo, con el objetivo de determinar el aporte de los huertos familiares en la calidad de la dieta de las familias de Trifinio y Nicacentral. Debido a que la información proveniente de las encuestas no mostraba la frecuencia de consumo de alimentos, se decidió utilizar la lista de los alimentos consumidos por grupo de alimentos en un período de una semana para valorar la importancia de cada grupo de alimentos, lo que provocó una modificación en el puntaje. Esto resulta en lo que se llamó para fines de la presente investigación FCS modificado. El Programa Agroambiental Mesoamericano (MAP), a través del proceso de aprendizaje vivencial que se desarrolla en las escuelas de campo, permite definir un plan de actividades para desarrollar buenas prácticas productivas a nivel de patio y de finca adecuadas a contextos para contribuir con la mejora de la seguridad alimentaria y nutricional de las familias de Trifinio y Nicacentral. |

In order to determine the diversity of food produced in home gardens and how they affect food and nutritional security of families of Trifinio (border areas between Guatemala, Honduras and El Salvador) and Nicacentral (north central area bounded by Nicaragua municipalities in Waslala, El Cua, Jinotega, Tuma/La Dalia, Matiguás, Muy Muy, Rancho Grande, San Ramon) in a context of climate variability, information rose through surveys that were applied for a baseline study 2013 and monitoring of Agroambiental 2015 Mesoamerican Program (MAP) of the Tropical Agricultural Research and Higher education Center (CATIE). The surveys were carried out to 329 families have patios, and are part of MAP. With the information collected in the baseline, studies and monitoring of MAP databases of different issues were addressed in the survey, which in turn served for subsequent statistical analyzes were developed. Climate change, low income, lack of education, poor use of resources, etc, cause severe losses in food production conditions causing food and nutrition insecurity in Central America. The threat of continuing drought makes it necessary to implement adaptation activities as planting trees in the community, nurseries, home gardens, planting drought-resistant crops such as tubers, and managing cattle so that it can live with the trees and the forest. Trifinio territories and Nicacentral in 2014-2015 showed marked drought conditions and high susceptibility to natural disasters, and because it is predominantly rural areas, the economy of the areas have a strong dependence on the production of basic grains mainly grown in family patio. In order to analyze the contribution of home gardens in the dietary diversity of families, Shannon index was estimated. The foods´ richness within each food group was also determined. In this case the response variable is a number, so a generalized linear model was used to test the hypothesis of equal means. To meet the goals for this investigation the score food consumption FCS was considered, proper score for statistical analyzes that show the comparison between baseline and monitoring to determine the contribution of home gardens in the quality of diet Trifinio families and Nicacentral. Because the information from the surveys did not show the frequency of food consumption, it was decided to use the list of foods consumed by food group over a period of one week to assess the importance of each food group, prompting a change in the score, resulting in what is called the end of this research modified FCS. The Mesoamerican Agro-environmental Program (MAP), through experiential learning process that takes place in the field schools, defines a plan of activities to develop good production practices at farm yard and appropriate contexts to contribute to improving food security and nutrition of families and Nicacentral Trifinio. |
