El trabajo de investigación se concentra en concebir las post-cosecha en un sistema integral, desde el producto al consumo final, observando las variables que influencian al flujo del producto. Se identifican y cualifican las pérdidas de productos que ocurren en componentes prioritarios que conforman el sistema y finalmente se proponen soluciones factibles para reducir las pérdidas más importantes en cada componente. |
