Presenta un panorama general sobre la producción de carne en Argentina, comenzando por la localización de las principales áreas de invernada en el país. Destaca que la producción de carne vacuna se hace exclusivamente por medio del pastoreo directo todo el año, prescindiendo de la estabulación. Los concentrados y forrajes conservados no son utilizados sistemáticamente en los sistemas de engorde. Identifica cinco regiones de producción: 1) región pampeana; 2) noreste argentino (NEA); 3) noroeste argentino (NOA); 4) región cuyana; 5) región patogónica. Describe más ampliamente la región pampeana, en cuanto a sus características productivas, dado que esta región cuenta con aproximadamente el 80 por ciento de las existencias totales del ganado vacuno argentino.
