El trabajo de investigación se concentra en concebir las post-cosecha en un sistema integral, desde el producto al consumo final, observando las variables que influencian al flujo del producto. Se identifican y cualifican las pérdidas de productos que ocurren en componentes prioritarios que conforman el sistema y finalmente se proponen soluciones factibles para reducir las pérdidas más importantes en cada componente.

The research work focuses on conceiving the post-harvest in an integral system, from the product to the final consumption, observing the variables that influence the flow of the product. Product losses that occur in priority components that make up the system are identified and qualified and, finally, feasible solutions are proposed to reduce the most important losses in each component.
