The paper refers to the colour, texture, flavour and nutritive value of mangoes. Other factors as respiration and transpiration, principles of processing, harvesting, postharvest practices, preventing enzymatic browning, have been taken in consideration. Not much work has been done on processing of local avocadoes and all the principles used in mango processing apply to minor. (MIBA)
